Fermentation for 8 to 10 weeks in tanks at a temperature of 16 to 18 °C.
Indigenous yeasts.
Maturing on lees for 8 months.
Complete malolactic fermentation.
One racking before bottling.
A fruity, round, vivid and exhilarant wine to enjoy as an aperitif, either pure or with fruit liqueur (Kir). A perfect accompaniment to clams, grilled fish and charcuterie. |
