Grape variety: Chardonnay.
Average age of the vines: 56 years.
Indigenous yeasts.
Fermentation in one- to five-year-old barrels.
Temperature control (18-20 °C), duration of the fermentation 8 to 10 weeks.
Maturing on lees for 11 months.
Complete malolactic fermentation.
“Bâtonnage” (stirring up of the lees) depending on the vintage.
Bottling after one racking.
The greatest of all Meursault wines, which, as all experts and wine lovers agree, would deserve to be classified as a Grand Cru. It certainly possesses the strength and finesse of one. Enjoy it with tasty fish such as perch, red mullet or turbot or with certain types of game like pheasant and roe venison. It will reveal all of its richness and complexity after seven to ten years. |
