Average age of the vines: 30 years.
Indigenous yeasts.
Fermentation for 8 to 10 weeks in oak barrels, 50 % of which are new.
Temperature control (18-20 °C), duration of the fermentation 8 to 10 weeks.
Maturing on lees for 11 months.
Complete malolactic fermentation
“Bâtonnage” (stirring up of the lees) depending on the vintage.
Bottling after one racking.
This rich and powerful wine is the result of the blending of two Premiers Crus from the slopes of Puligny. Fresh almonds and white flowers dominate the bouquet. The round and rich palate displays aromas of dry fruits, which are accentuated by the elegant minerality of this Premier Cru. A wine which will best reveal its character if served with fatty and firm types of fish in a tasty sauce. |
